Chicken fajitas with bell pepper and onion recipe

Slice the chicken, bell peppers, and onion into thin strips.

In a small bowl, mix all the fajita seasoning ingredients together.

2. Cook the Chicken (6-8 minutes)

Heat 1 tbsp of olive oil in a large skillet over medium-high heat.

Add the chicken strips and sprinkle half of the seasoning mix over them.

Cook for 5-6 minutes, stirring occasionally, until the chicken is golden brown and fully cooked (internal temperature should reach 165°F / 74°C).

Remove the chicken from the pan and set aside.

3. Cook the Vegetables (5-6 minutes)

In the same skillet, add another tbsp of olive oil.Toss in the bell peppers, onion, and remaining fajita seasoning.Saute for about 5-6 minutes, until the vegetables are slightly charred but still crisp-tender.Add the minced garlic in the last minute of cooking and stir well.

4. Combine & Serve

Return the cooked chicken to the skillet, squeeze fresh lime juice over everything, and toss to combine.Warm the tortillas in a dry pan or microwave.Serve the chicken and vegetables in tortillas with your favorite toppings.
