Step 1: Prepare the Potatoes
- Grate the potatoes and place them in a bowl.
- Pour water over the potatoes and let them sit for 10 minutes to remove excess starch.
- Drain the water completely and squeeze out excess moisture using a clean kitchen towel.
Step 2: Prepare the Vegetable Mixture
- Heat 2 tbsp olive oil in a pan over medium heat.
- Add chopped onions and grated carrots and sauté until softened (about 3-4 minutes).
- Remove from heat and set aside.
Step 3: Prepare the Batter
- In a mixing bowl, whisk together eggs, milk, flour, salt, and black pepper until smooth.
- Stir in the grated potatoes, sautéed vegetables, and chopped green onions. Mix well.
Step 4: Bake the Casserole
- Preheat the oven to 200°C (400°F).
- Grease a baking dish with 2-3 tbsp olive oil and pour in the potato mixture, spreading it evenly.
- Bake for 30 minutes until the top is set and lightly golden.
Step 5: Add the Toppings & Bake Again
- Remove the dish from the oven and layer sliced tomatoes on top.
- Sprinkle grated cheese and a pinch of salt over the tomatoes.
- Return to the oven and bake for another 10 minutes, or until the cheese melts and turns golden.
Step 6: Garnish & Serve
- Sprinkle fresh parsley on top before serving.
- Slice and enjoy warm!
