Place the pork loin in the slow cooker.
In a small bowl, whisk together the honey, soy sauce, minced garlic, and apple cider vinegar.
Pour the honey garlic mixture over the pork loin, ensuring it’s well coated.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and easily pulls apart with a fork.
Once cooked, remove the pork from the slow cooker and shred it using two forks.
Return the shredded pork to the slow cooker and mix it with the sauce before serving.

For a bit of heat, add a teaspoon of red pepper flakes to the honey garlic mixture.
