Instructions:
Heat olive oil in a large skillet over medium heat.
Sauté onion and garlic for about 3 minutes until fragrant.
Add diced tomato, coconut milk, sour cream, and tomato paste. Cook for another 3 minutes.
Add bell peppers and fish chunks to the skillet.
Season with sea salt, black pepper, and red pepper flakes.
Cover the skillet and let the stew cook for at least 10 minutes.
Garnish with fresh cilantro before serving.
