1. Preheat the oven: Preheat the oven to 200°C (400°F).
2. Prepare the potatoes: Wash the potatoes well and spray them several times with a fork. Place them in a baking tray and bake for about 45-60 minutes, or until tender when poking with a fork.
3. Cooking the meat: While the potatoes are baking, heat a skillet over medium-high heat. Add the pieces of meat and season with salt and pepper. Cook until golden brown and cooked to your liking. Fire removal and reservation.
4. Prepare the stuffing: Once the potatoes are cooked, remove them from the oven and let them cool a bit. Cut each potato in half lengthwise and remove some of the pulp with a spoon, leaving a thin edge. Place the pulp in a bowl and mix with butter, sour cream, half of the cheddar cheese, salt and pepper to taste.
5. Stuffing Potatoes: Stuff each potato half with the pulp mixture, then add the cooked meat pieces. Sprinkle the rest of the cheddar cheese on top.
6. Bake Again: Rearrange stuffed potatoes in baking tray and bake for 10-15 minutes, or until cheese is bubbly and golden.
7. Add the toppings: Take the potatoes out of the oven and garnish with bacon bits and chopped green onions.
8. Serve: Serve hot and enjoy this delicious dish that combines flavors and textures.
