Ingredients
For the Chicken:
• 2 lbs chicken (bone-in, cut into pieces)
• 2 tbsp Jamaican curry powder (preferably hot)
• 1 tsp turmeric
• 2 cloves garlic, minced
• 1 tbsp fresh ginger, minced
• 1 small onion, finely chopped
• 2 scallions, chopped
• 1 tsp thyme (fresh or dried)
• 1 scotch bonnet pepper (whole or sliced, optional for heat)
• 1 tsp all-purpose seasoning or chicken seasoning
• Salt and freshly ground black pepper, to taste
For Cooking:
• 2 tbsp vegetable oil
• 1 medium potato, peeled and diced
• 1 medium carrot, sliced
• 1 cup coconut milk
• 1 cup chicken stock or water
• 1 tsp more Jamaican curry powder (optional, for a stronger flavor)
