Zucchini Cheddar Bread

Preheat your oven to 350°F (180°C) and grease a 9×5 inch loaf pan.
In a large bowl, mix together the zucchini, green onions, eggs, sour cream, and melted butter until well combined. Stir in the shredded cheddar cheese.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually mix the dry ingredients into the wet ingredients until just combined. If the batter is too thick, you can add 1-2 tablespoons of milk or water.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
