1. Prepare the Chicken Breasts:
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt, pepper, garlic powder, and paprika on both sides.
Cut a deep slit into the side of each chicken breast to create a pocket for the filling.
2. Make the Filling:
In a mixing bowl, combine the cream cheese, mayonnaise, pressed garlic, and salt until smooth.
Fold in the chopped spinach, mozzarella cheese, and parmesan cheese until well combined.
3. Stuff the Chicken:
Stuff each chicken breast with the spinach and cheese mixture, dividing the filling equally among the three breasts.
Secure the opening with toothpicks to keep the filling inside.
4. Cook the Chicken:
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Sear the chicken breasts for 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C)
