1In a saucepan, heat the heavy cream and sugar over medium heat, stirring until the sugar dissolves. Bring to a gentle simmer, but do not let it boil.
2Remove from heat and stir in the mandarin juice, lemon juice, and mandarin zest.
3If using gelatin, dissolve it in 2 tablespoons of cold water, then add it to the mixture. Stir until fully incorporated.
4Pour the mixture into small glasses or ramekins. Let them cool at room temperature for about 15–20 minutes.
5Refrigerate for at least 3 hours until set.
6Serve chilled, garnished with extra mandarin zest or a mandarin slice.
