1Make the Bacon Jam:
In a skillet over medium heat, cook bacon until crispy (about 8-10 minutes). Remove and drain on paper towels.
In the same skillet, sauté onions until soft (about 5 minutes).
Stir in brown sugar, maple syrup, balsamic vinegar, smoked paprika, and black pepper.
Return bacon to the pan and simmer on low for 5 minutes, until thick and jammy.
Let cool slightly before using.
2Assemble the Toastie:
Butter one side of each slice of bread.
Place one slice butter-side down in a skillet.

3Toast the Sandwich:
Heat a skillet or griddle over medium-low heat.
