Step-by-Step Instructions

1. Prepare the Pork Loin

  1. Trim any excess fat from the pork loin and pat it dry with paper towels.
  2. Rub the pork with salt, black pepper, and smoked paprika, ensuring an even coating.

2. Make the Pineapple Marinade

  1. In a medium mixing bowl, combine the reserved pineapple juice, soy sauce, honey, garlic, and ginger. Whisk until well blended.

3. Sear the Pork (Optional but Recommended)

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear the pork loin on all sides until golden brown, about 2-3 minutes per side. This step locks in the flavors and adds a nice crust.

4. Assemble in the Slow Cooker

  1. Place the seared pork loin in the slow cooker.
  2. Pour the pineapple marinade over the pork.
