Step-by-Step Instructions
1. Prepare the Pork Loin
- Trim any excess fat from the pork loin and pat it dry with paper towels.
- Rub the pork with salt, black pepper, and smoked paprika, ensuring an even coating.
2. Make the Pineapple Marinade
- In a medium mixing bowl, combine the reserved pineapple juice, soy sauce, honey, garlic, and ginger. Whisk until well blended.
3. Sear the Pork (Optional but Recommended)
- Heat olive oil in a large skillet over medium-high heat.
- Sear the pork loin on all sides until golden brown, about 2-3 minutes per side. This step locks in the flavors and adds a nice crust.
4. Assemble in the Slow Cooker
- Place the seared pork loin in the slow cooker.
- Pour the pineapple marinade over the pork.
- Add the pineapple chunks around the pork.
5. Cook
- Cover and cook on low for 6–8 hours or on high for 3–4 hours. The pork should reach an internal temperature of 145°F (63°C) and be fork-tender.
6. Thicken the Sauce (Optional)
- Once the pork is cooked, transfer it to a cutting board and let it rest for 10 minutes.
- Pour the juices from the slow cooker into a saucepan and simmer over medium heat.
- If you prefer a thicker sauce, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the saucepan. Cook until thickened.
7. Serve
- Slice the pork loin and drizzle the pineapple sauce over the top.
- Garnish with chopped cilantro or green onions for added freshness.
- Serve with steamed rice, mashed potatoes, or roasted vegetables for a complete meal.
