Step-by-Step Instructions for Cabbage and Minced Meat
Step 1: Prepare the Ingredients
- Shred the cabbage finely using a sharp knife or a mandoline slicer.
- Chop the onion, mince the garlic, and grate or chop the carrots.
- If using fresh tomatoes, dice them finely.
Step 2: Sauté the Minced Meat
- Heat 2 tablespoons of oil in a large skillet or heavy-bottomed pot over medium heat.
- Add the minced meat and break it apart with a spatula. Cook for about 5-7 minutes until browned and no pink remains.
- Season with a pinch of salt and black pepper. Once cooked, transfer the meat to a plate and set it aside.
Step 3: Cook the Aromatics
- In the same skillet, add a little more oil if needed.
- Sauté the onion and garlic for about 3 minutes, until the onion becomes soft and translucent.
- Add the grated carrots and cook for another 2 minutes, stirring frequently.
Step 4: Add the Cabbage
- Add the shredded cabbage to the skillet in batches, stirring each time to help it wilt down.
- Cook for about 5-7 minutes, until the cabbage softens slightly.
Step 5: Combine Everything
- Return the cooked minced meat to the skillet with the cabbage.
- Stir in the tomato paste (if using) and the canned tomatoes (or fresh tomatoes).
- Sprinkle in the paprika, cumin, salt, and black pepper to taste.
- Add 1 cup of water or stock, stir well, and bring the mixture to a simmer.
Step 6: Simmer and Cook
- Reduce the heat to low, cover the skillet with a lid, and let the mixture cook for 15-20 minutes.
- Stir occasionally to ensure nothing sticks to the bottom of the skillet. If the mixture looks dry, add a little more water or stock.
- Taste and adjust seasoning as needed.
Step 7: Serve and Garnish
- Once the cabbage is tender and the flavors have melded together, remove the skillet from the heat.
- Garnish with freshly chopped parsley for a burst of color and flavor.
- Serve hot with rice, mashed potatoes, pasta, or fresh crusty bread.
Tips for the Best Cabbage and Minced Meat
- Choose Fresh Cabbage: Firm and bright green cabbage works best for this dish. Avoid wilted or brown leaves.
- Season Gradually: Taste as you go and adjust the salt and spices to your preference.
- Add Extra Veggies: Feel free to add bell peppers, peas, or green beans for a more colorful dish.
- Use Stock for Richer Flavor: Instead of water, use beef or chicken stock to enhance the dish’s savory depth.
- Spice It Up: Add a pinch of red pepper flakes or chili powder for a spicy kick.
