Step 1: Soak and Prepare the White Beans
- Place the dried white beans in a large bowl, cover them with water, and let them soak overnight. This softens the beans and reduces cooking time.
- Drain and rinse the beans before use. Set aside.
Step 2: Sauté the Vegetables
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion, garlic, carrots, and celery. Sauté for 5–7 minutes until the vegetables are softened and fragrant.
Step 3: Add Turkey Ham and Seasonings
- Stir in the diced turkey ham, allowing it to brown slightly and release its flavors.
- Add the bay leaf, thyme, smoked paprika, and black pepper. Stir to combine, coating the ingredients evenly with the seasonings.
Step 4: Incorporate the Beans and Liquids
- Add the soaked white beans to the pot.
- Pour in the chicken broth and water, ensuring the beans are fully submerged. Stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 1.5 to 2 hours, or until the beans are tender and the flavors have melded.
Step 5: Adjust the Seasoning
- Once the beans are tender, taste the dish and adjust the salt and pepper as needed. If you prefer a spicier flavor, stir in the red pepper flakes at this stage.
- For a thicker consistency, use a potato masher or the back of a spoon to mash some of the beans directly in the pot. Stir to combine.
