Step 1: Soak and Prepare the White Beans

  1. Place the dried white beans in a large bowl, cover them with water, and let them soak overnight. This softens the beans and reduces cooking time.
  2. Drain and rinse the beans before use. Set aside.

Step 2: Sauté the Vegetables

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion, garlic, carrots, and celery. Sauté for 5–7 minutes until the vegetables are softened and fragrant.

Step 3: Add Turkey Ham and Seasonings

  1. Stir in the diced turkey ham, allowing it to brown slightly and release its flavors.
  2. Add the bay leaf, thyme, smoked paprika, and black pepper. Stir to combine, coating the ingredients evenly with the seasonings.

Step 4: Incorporate the Beans and Liquids

  1. Add the soaked white beans to the pot.
  2. Pour in the chicken broth and water, ensuring the beans are fully submerged. Stir well.
  3. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 1.5 to 2 hours, or until the beans are tender and the flavors have melded.

Step 5: Adjust the Seasoning

  1. Once the beans are tender, taste the dish and adjust the salt and pepper as needed. If you prefer a spicier flavor, stir in the red pepper flakes at this stage.
  2. For a thicker consistency, use a potato masher or the back of a spoon to mash some of the beans directly in the pot. Stir to combine.
